Watermelon Feta Mint Salad

A juicy, cooling ritual that tastes like sunshine and feels like a soft breeze.

Fresh, fruity, crunchy, deeply refreshing. The kind of meal that soothes the nervous system and lifts your mood in one bite. Perfect post-yoga, or as a radiant afternoon reset. Add a slice of warm sourdough and call it lunch.

Ingredients

Salad base

  • A few handfuls of mixed green leaves
  • ¼ bulb fennel, thinly sliced
  • ½ cucumber, thinly sliced
  • 1 generous cup watermelon, cubed
  • 2–3 fresh figs, quartered
  • Handful of blueberries
  • Handful of strawberries, halved
  • A few fresh mint leaves, to top

Feta-mint dip

  • 100g feta
  • 2–3 tbsp yoghurt of choice
  • 1 tbsp fresh lemon juice
  • 1 small handful mint leaves
  • Cracked black pepper, to taste

To finish

  • Crushed pistachios, for crunch

Assemble the salad.Gently layer the greens, fennel, cucumber, watermelon, figs, blueberries, and strawberries onto your favorite serving plate or bowl. Top with mint leaves.

Make the feta-mint dip.Blend the feta, yoghurt, lemon juice, mint leaves, and a few cracks of black pepper until creamy and pourable.

Finish.Drizzle the dip generously over the salad. Sprinkle with crushed pistachios for a little extra crunch.

Serve.Close your eyes. Take a bite. Let summer land.
