Ingredients
Wraps
- 3 eggs
- 100g fresh spinach
- 40g oat flour (or spelt flour)
- Pinch of salt
- 1 tsp Italian spices
Filling
Choose your favorites
- Whipped ricotta and feta
- 200g roasted salmon or chicken
- Arugula
- Avocado
- Tomato slices
- Cucumber
- Sprouts
- A drizzle of homemade pesto
- Walnuts
Instructions

Blend the batter.Add the eggs, spinach, oat flour, spices, and salt to a blender. Blend until smooth and vibrant green.

Cook the wraps.Heat a non-stick pan with a little oil over medium heat. Pour half the batter into the pan and cook for 2–3 minutes on each side, until set and golden. Repeat with the remaining batter to make two wraps.

Assemble.Lay the wraps flat and fill with your favorite ingredients. For a composed plate, include a protein (smoked salmon, grilled chicken, or tofu), veggies (arugula, tomatoes, cucumber), and healthy fats (avocado, seeds, or nuts).

Roll and serve.Fold and roll the wraps tight. Slice in half for easier bites.
